A parcel of these grapes were harvested earlier for direct press rosato style and then the remaining grapes when picked a little fuller in ripeness and fermented with native yeast in an open top fermenter. Gentle plunges only then pressed from skins within 7 days.

The two parcels were then blended together resulting in a lighter style wine that is aromatic and crunchy.

… and yes this wine is named after Rizzo from Grease the movie.
